Cauliflower Fried rice

Wondering what to do with that leftover chicken or pork? Or maybe you're trying to figure out what you will make with the leftovers you take from your parents house like me. Either way I have a recipe for you!

Ingredients:
2 cups of cooked chicken or pork
1 package of frozen riced cauliflower (or be fancy and make your own!)
1 cup of snap peas
1/4 cup of diced onion
2 eggs
olive oil
3 tbsp soy sauce

Directions:
Heat oil in a large skillet. Scramble eggs and set aside

Add more oil as necessary (or just some olive oil spray) and brown onions. After onions are browned, add in the snap peas and the riced cauliflower. Cook down until water from cauliflower is evaporated and it starts to brown.
Add chicken or pork and the soy sauce and mix to combine.
I like to reheat my meat in the microwave before adding to the skillet so that I don't overcook the vegetables trying to heat the chicken/pork.

​Serve with a salad and enjoy!
